Another way of getting round the fiddly carving of a whole partridge on the plate.  A partridge fillet can be cooked in the same way as you would a chicken breast fillet - you will find you have a tasty and healthier alternative! As a rough guide allow 2 fillets per person for a starter and 3 for a main course.

One of the options available is a 1kg ungraded pack of fillets which will have some blemishes, bruising and different sizing but may be ideal for casseroles and pie making . If you want some neat and tidy fillets for a smart dinner party, do not buy this option.

Lead shot is traditionally used for shooting game birds like partridge. However, as the British game industry transitions towards more sustainable ammunition, we have introduced a new eco-friendly option, typically in the form of steel shot, alongside the standard choice.
