Meat from the shoulder and flank which has been through the mincer on a fine plate, venison makes an outstanding lasagne or cottage pie with a unique and distinctive taste. Venison is also much leaner than beef, so better for you. In the autumn the deer put on a little fat for the courting season and you may notice some white, fatty flecks in the mince.  Once you’ve had a rich venison lasagne or ragout, you never go back to beef!
