The Mallard is the largest of the the wild ducks and is what most people think of when eating wild duck. One bird will feed 2 people, and can be roasted with a quartered orange placed in the cavity. It has little fat and much more tasty than a farmed duck!
Unlike its image, the oven ready bird will have some bruising or blemishes on the skin where it has been shot, and this is quite normal. Unprocessed, unprepared, in feather options are also available but please look at the following link for advice on buying in feather. The 'in feather' image shows a female which is brown in colour and the male drake with its more colourful plumage.
Roast for 30 minutes, rest for 15 and serve pink.
