Wigeon and Pintail are offered here as the largest wild duck after the mallard. Of the three, wigeon is more variable in flavour because it tends to favour grazing on salt marshes below the sea wall but when it has fed inland or on fresh marshes it eats as well as a mallard. One per person is generous, but one shared between two is a little mean!

Just plain roast with oranges or berried fruits and enjoy. Consider marinading or soaking in water with vinegar overnight in the fridge if the duck offers a 'marshy' aroma!
